There are certain dishes that are staple comfort food in your house. This dish is one of those in our house hold. It was originally cooked for my Bec while on a tour in Africa as her vegetarian option to eat. The ingredients you can get at any supermarket, and it’s so nutritious you could eat it every day!
It has evolved since way back when, but this is the current recipe. Bec says that I have taken this dish over, but I have only added one thing to her recipe over the years. I just seem to get to cook it more. Chickpea curry is such a versatile dish, you can make it with your own favorite spices and herbs.
We love it with some fresh coriander and parsley on the side with harissa spiced yoghurt and roti bread. Chickpea curry is definately a dish that makes me think of home. I hope you enjoy this dish as much as we do.
