Oven Baked Gnocchi with Vegetables

Our little ones favourite dish of all time is gnocchi. I have cooked many different variations of gnocchi and every time she either protests or pretends she doesn’t like it. She just prefers her gnocchi with jared pesto stir d through. I think there may be a little food snobbery there.

To be honest I don’t mind gnocchi that way either and especially when you just want to make a quick meal, but you know what? Sometimes you just have to try something different.

I finally had success with this version and she ate it all. Just one note & that is you don’t need to boil the gnocchi. Just use it straight out of the packet. My favourite thing about this dish is the crunch of the gnocchi. Delicious!

Oven Baked Gnocchi with Vegetables

Ingredients

  • 1 kg 1 gnocchi

  • 250 g 250 basil pesto

  • 1 1 red capsicum roughly chopped

  • 1 1 red onion cut into thin slices

  • 250 g 250 punnet of cherry tomatoes cut in halves

  • 2 Tbsp 2 olive oil

Directions

  • Pre heat your oven to 200°C.
  • In a large mixing bowl, add all your ingredients & mix them all together so they are all coated. 
  • Grease you pan with olive oil or baking paper & then spread all the mixture evenly on your pan.
  • Place the pan in the oven for 20 minutes.
  • Remove from the oven & plate up. Garnish with pecorino or parmesan and serve Enjoy!
