Summer salads don’t get any better than this walnut & feta salad with a raspberry vinaigrette. Crunchy walnuts, juicy berries with salty feta. Ladies and gentleman, start your forks.
Few weeks back we went back up to Bagara to see family, and the night that it was our turn to cook, I chose to make chicken using my BBQ chicken dry rub while Bec decided to experiment with this salad. Now that’s a team effort. Everyone voted that this salad won hands down.
This walnut & feta salad is light and tasty with well-balanced flavours. It’s a fantastic salad for entertaining because of its easy preparation and I have to say, I just love the colours. It almost has that Christmas feel about it. The raspberry vinaigrette is absolutely delicious, so I would try and remember to make a little extra for seconds or even another quick salad during the week. Enjoy!
Walnut & Feta Salad with a Raspberry Vinaigrette

2 Tbsp 2 walnuts finely chopped
200 g 200 Danish feta, crumbled
150 g 150 baby spinach leaves
250 g 250 raspberries
1/4 cup 1/4 extra virgin olive oil
1 Tbsp 1 red wine vinegar
1 Tbsp 1 honey
1 1 garlic clove
1/4 tsp 1/4 sea salt flakes
1 1 small red onion, halved, thinly sliced
1 1 Lebanese cucumber sliced to your liking
1/4 1/4 mint leaves
Directions
- Place oil, vinegar, honey, garlic, salt & half of raspberries in a food processor. Process for 30 seconds or until smooth. Pour into a small jug & set aside.
- Place the spinach, onion, feta, cucumber, mint, walnuts & remaining raspberries in a salad bowl.
- Drizzle over raspberry vinaigrette, season and serve. Enjoy!
