Bircher Muesli

Mornings in our house aren’t usually chaotic, as we like things to run in a nice relaxed routine. There is nothing I hate more than feeling rushed in the morning which makes me feel like I’m catching up with everything else for the rest of the day. By the time I get myself ready and get everyone’s lunches out of the fridge (which Bec makes the night before), then get everything ready to make breakfast, coffees, teas etc, I am ready for when everyone walks into the kitchen and then get them their breakfast requests.

Bircher muesli is a favourite in our house but ironically I don’t make it often until one of us get a craving for it. It’s super easy to make but ideally you need to plan for it. Even though it is an easy dish to make, bircher muesli really needs to sit overnight to get that consistency and for the flavours to soak each other up. Having this for breakfast really is a delicious way to start the day and gives the energy you need to face what ever challenges you have for the morning. 

When you get yourself a bowl feel free to add a little more yogurt or honey or even some fruit depending on what you fancy that morning.

Ingredients

  • 1 1/2 cups 1 1/2 rolled oats

  • 1/4 cup 1/4 flax seed

  • 1/2 cup 1/2 bran

  • 1/2 cup 1/2 dried fruit

  • 1/4 cup 1/4 raw mixed nuts (hazelnut, walnuts, almonds etc)

  • 1/2 cup 1/2 greek yogurt

  • 2 cup 2 milk or milk alternative

  • 1/3 cup 1/3 apple juice

  • half an apple grated

  • 1/2 tsp 1/2 cinnamon

  • 1 Tbsp 1 honey

Directions

  • In a large bowl, mix all the ingredients together well and then cover the bowl with plastic wrap and place it in the fridge overnight or at lest 4 hours.
  • Serve it in your bowl & garnish with a little more yogurt & Honey. YUM!
