Artichoke & Spinach Pizza

This artichoke and spinach pizza is going to be your new favorite pizza recipe. 

We love making pizzas in our house. When Bec and I plan to make pizzas on a Saturday night, every now and again we will do a pizza challenge where we both have to come up with a new pizza. This artichoke & spinach pizza was my entry for the last challenge.

With the pizza base you can by all means make your own but one from the store is just great as well. This recipe is great to play around with too. I’m using parmesan in this one, but you can use any good strong cheese like cheddar, romano or even gorgonzola.

It’s such an easy pizza to make and is absolutely delicious. It might be a little decadent for some out there but hey, there is nothing wrong with being a little naughty from time to time. It’s definitely one of those pizzas that you won’t be satisfied with only one slice! Should any pizza survive dinner, it makes great leftovers and like most pizzas, seems to taste better the next day and is awesome straight out of the fridge too. Enjoy!

Ingredients

  • 1 1 Pizza base (store bought)

  • 200 g 200 marinated artichoke hearts diced

  • 3 cups 3 baby spinach chopped

  • 150 g 150 cream cheese

  • 1/2 cup 1/2 parmesan cheese grated

  • 1/4 cup 1/4 mayonnaise

  • 1/2 tsp 1/2 olive oil

  • 1 1 garlic clove diced

  • 1/4 tsp 1/4 tsp garlic powder

  • salt and pepper to taste

  • chilli flakes optional

Directions

  • Preheat oven to 230°C.
  • Heat olive oil in a pan over medium heat.
  • Add garlic and sauté for a minute, stirring frequently.
  • Add artichoke hearts and sauté for a minute.
  • Add your spinach bit by bit until the spinach begins to wilt. You can add a little water to help if you need to.
  • Add cream cheese, parmesan, mayonnaise, garlic powder, red pepper flakes, salt & pepper to the pan & stir to combine. Cook for 2-3 minutes.
  • Add a little salt & pepper to taste if you need.
  • Take the mixture off the heat & spread evenly on the pizza base. 
  • Place in the oven and cook for 10-15 minutes or until you have a crispy crust.
  • Remove from the oven, slice and enjoy!
