Peanut Butter & Banana Ice Cream

“Holy Fake Ice Cream Batman!” I’ve got something that will blow your minds. It’s healthy and only uses two ingredients. The ice cream is so delicious & hard not to resist going back for seconds. The best thing is that it is so quick and easy to make.

A couple of things to note down before you start, when freezing your bananas please make sure you peel them before you put them in the freezer. The reason is because it is quite challenging to peel a frozen banana. Believe me I have tried. Also freeze them for at least 12-24 hours.

If you want, put any toppings you want like some fruit, maybe some cheeky chocolate or fudge, go nuts (pun totally intended) but I love putting melted peanut butter & crushed peanuts that gives that gives the dish that hot fudge element. YUUUUM!

Ingredients

  • 4 frozen bananas

  • 3 Tbsp 3 of peanut butter

  • Melted peanut butter (optional)

  • Crushed peanuts (optional)

Directions

  • Add the frozen banana into your food processor & wiz the banana into small tiny pieces.
  • Once that has happened add your peanut butter and keep going wizzing. You may need to stop every now & again to scrape down the sides & beak up any clumping. Soon enough it will smooth out into ice cream.
  • Melt some peanut butter in the microwave for 30 seconds at a time until melted.
  • Scoop out into your bowls & drizzle melt peanut butter & sprinkle some crushed peanuts. Enjoy!

That’s awesome Amber. Just make sure you freeze your bananas first if you don’t already have some in the freezer. Let me know how it turns out for you.
