Cheesy Slow Cooked Potato Bake

This cheesy slow cooked potato bake is a super simple set and forget recipe that will satisfy any family at the dinner table.

I love a good potato bake & better yet, one that I don’t have to keep an eye on. You just throw it in the slow cooker and go do whatever it is you need to do. In 4 hours, you will have a mouth-watering deliciously cheesy potato bake to go with your meal. Perfect for a cold winter’s night and it will give you great leftovers.

This recipe uses basic ingredients. You can have the potatoes peeled or unpeeled. I leave the skins on as I like the flavour and texture. Another great tip is that if you’re vegetarian, you can use Tofurky slices instead. There’s nothing to cook separately, and you can have all the slicing and layering work done in about 10 to 15 minutes. 

Then that’s you done, the hands-on work is finished. Set up everything in your slow cooker and let it work it’s magic. This cheesy slow cooked potato bake goes great with veggies or with a green salad. This is pure comfort food at it’s best. Especially with a nice glass of red. Cheers!

Ingredients

  • 10 large 10 washed potatoes sliced

  • 2 2 onions sliced

  • 2 cups 2 ham diced

  • 1 can 1 can condensed cream of celery soup

  • 1 cup 1 sharp cheddar cheese grated

  • 1 cup 1 parmesan cheese grated

  • 2 Tbsp 2 fresh parsley minced

  • 1/2 cup 1/2 milk

  • 1/2 tsp 1/2 garlic powder

  • 1/2 tsp 1/2 salt

  • 1/2 tsp 1/2 pepper

Directions

  • Prepare all your ingredients.
  • In a medium bowl add your ham, cheese & onions then combine them all together.
  • In the slow cooker, make a layer of sliced potatoes at the bottom then the ham, cheese & onion.
  • Repeat until all your ingredients are gone.
  • In another bowl, mix the celery soup parsley, milk, salt, garlic powder & pepper. Keep some parsley aside for garnish.
  • Pour the mixture over the top & as it cooks it will coat all the layers.
  • Put the lid on & set the slow cooker on high and cook for 4 hours
  • Turn the slow cooker off and let it rest for about 10 minutes & serve. Enjoy!
