Creamy Vegetable Casserole

This creamy vegetable casserole is so simple to make and it tastes amazing. It’s an easy slow cooker recipe, and all you need to do is put your fresh ingredients into the slow cooker, set and forget!

Using cream of asparagus soup with fresh veggies, you can change them up however you want. Vegetables with anything cheesy and creamy are a match made in heaven. Adding the veggie stock and butter help give it flavour and thicken it up. It takes about four to five hours, give or take from start to finish, on the low setting. 

It’s great as a side dish recipes or even just a a main. I think it’s pretty darn good either way. When it comes to cooking meals for dinner, big meals for a large family or even a special occasion, making this in the slow cooker will save you time and even space. This is a great dish that goes amazing with turkey or a baked ham. Enjoy!

Ingredients

  • 500 g Frozen Vegetables (Carrots, Broccoli & Cauliflower)

  • 1/2 small onion chopped

  • 400 can can condensed cream of asparagus soup

  • 1 cup cheese dip

  • 1 cup white rice

  • 1/3 cup milk

  • 1/4 4 vegetable stock

  • 30 g butter

  • salt & pepper to taste

Directions

  • Place the veges into your slow cooker.
  • In a medium bowl, add the rest of your ingredients and mix them well & pour over your veges.
  • Cover the lid and cook on low for 4 1/2 to 5 hours.
  • Stir it a little and serve. Enjoy!
