Roast Lamb Marinade

As the Australia Day long weekend approaches, the one thing I always get asked to do is my roast lamb to bring to the party. In my opinion, the secret to a great roast lamb is not how you roast it (that’s just one important aspect to it), but your marinade. If you are marinading anything and it’s too strong or too bland, it will take away the enjoyment of eating it.

If I give one tip for the marinade is that you use a good strong german mustard & not a sweet one. This is because as the marinade roasts, it developes a slightly sweet taste. Using a sweet mustard would make it a little too sweet of a taste. This is a tried & tested family recipe and definitely goes best with lamb, but by all means give it a go on your favourite roasting meat and see what you think. I really hope you enjoy it as my family & friends do.
