Salty & Crispy Chicken Stir Fry

Like most of you out there, I love a good stir fry and if I was to pick a favourite meat to stir fry it would have to be chicken. Why? Chicken is reasonably cheap (no pun intended), it’s easy to use and you can use pretty much use all of the whole chicken. Whether that be the breast or thighs, legs or wings, chicken goes amazingly well with just about everything.

You can use either sliced breast or thighs for this dish. For this stir fry I am using a vegan chicken which you can buy at any decent vegan/vegetarian grocer. It’s amazing the things you can buy as meat replacements these days so don’t be afraid to try new things. I was raised a meat eater and still am, but I do love eating the meat alternatives too. It really makes you think of how you could use them in your existing repertoire or even create new recipes.

What ever protein you choose to cook with, this dish isn’t complicated and is a very text book stir fry. I know I’m cheating here but really who cares. If you’re using pre package fresh vegetables as I did for this dish? They’re still crispy fresh, not frozen and amazing for when you’re running late and have hungry mouths to feed. You still need to put some effort into it with getting the flavours just right. This just makes thinks simple & easy for you.

Ingredients

  • 800 g 800 chicken or vegan chicken

  • 400 g 400 fresh stir fry vegetables

  • 1/4 cup 1/4 teriyaki

  • 2 Tbsp 2 soy sauce

  • 1 1 small onion diced

  • 2 tsp 2 minced garlic

  • 2 tsp 2 minced ginger

  • 1 Tbsp 1 sesame seeds

  • 2 Tbsp 2 olive oil

  • 1 Tbsp 1 sesame oil

  • salt & pepper to taste

Directions

  • In a large fry pan on high heat, add your olive oil, garlic, ginger & onion. Cook for approx 2 minutes or until onions are translucent.
  • Add your chicken & cook for approx 3 minutes or until tender with a little crisp on the edges.
  • Add you sesame seeds & cook for another minute.
  • Add your vegetables & stir through for approx 2 minutes then add your sesame oil and cook for another minute.
  • Add the teriyaki & soy then stir through for another minute.
  • Add salt & pepper to taste.
  • Remove from the heat & serve. Enjoy!
