Strawberry, Walnut & Feta Salad

If you like eating salads with a difference then you are going to love this strawberry, walnut and feta salad with a delicious balsamic vinaigrette.


It may sound complicated but this salad is really simple to make. Beautiful strawberries, creamy feta and crunchy walnuts make a simple spinach salad irresistible.

Depending on your taste, you can use a plain balsamic vinegar, however the balsamic vinaigrette is incredibly easy to make. I love this salad as the taste of the strawberries mixed with the rest of the ingredients is really refreshing and just screams “Summer”. I really hope that you give this strawberry, walnut and feta salad a go. All that’s left to say is “bring on the BBQ’s. Enjoy! 

Strawberry, Walnut & Feta Salad

Ingredients

  • 300 g 300 baby spinach

  • 1 cup 1 strawberries sliced

  • 200 2g 200 Greek feta cheese cut into cubes

  • 1/4 cup 1/4 walnuts chopped

  • 1/4 tsp 1/4 salt

  • 1/4 tsp 1/4 ground pepper

  • 1 Tbsp 1 olive oil

  • 1 Tbsp 1 balsamic vinegar

  • 2 tsp 2 shallot finely chopped 

Directions

  • Mix the olive oil, vinegar, shallot, salt and pepper in a large bowl. Let stand for 5 to 10 minutes to allow shallots to soften and mellow a bit.
  • Add spinach, strawberries, feta and walnuts to the bowl and toss to coat with the dressing.
  • Serve & Enjoy!
