Being fortunate to have travelled a bit, I picked up this recipe while travelling in Africa. This simple dish is just perfect for a mid week “what to do” dish and takes no time at all. It ticks all the right boxes in that it’s delicious, homely and is perfect comfort food for a cold winters night to sit in front of the television watching your favourite movie.



If you are looking to have something to accompaniment the dish, I would suggest roti bread, but you can use naan or even a burrito wrap.
