Rogan Josh Paste

If you’re going to make any Indian dish, there is nothing better than starting from scratch and making your own paste instead of using one from a jar. Why? It just tastes better and the smells are just like you are in the kitchen of someones home in India. You can’t get any better than that! Unless it’s in your own kitchen.

This literally takes 10 minutes and will give your four to five meals depending on what dishes you’re going to use it for. A good tip is that once you make your paste, just leave it for a few hours before you use it. Just so all the flavours come together.

Ingredients

  • 1 tsp 1 black peppercorns

  • 2 tsp 2 coriander seeds

  • 2 tsp 2 cumin seeds

  • 1 red chilli

  • 2 cloves of garlic

  • Fresh ginger (thumb size)

  • 80 g 80 Jared roasted Capsicum (peppers)

  • 1 Tbsp 1 Sweet paprika

  • 1 tsp 1 smoked paprika

  • 1 tsp 1 paprika

  • 2 tsp 2 garam masala

  • 1 tsp 1 tumeric

  • Pinch of salt

  • 2 Tbsp 2 of tomato paste

  • Handful of fresh coriander

Directions

  • Heat your fry pan on a medium heat and lightly toast the cumin, coriander & peppercorns then grind them in a food processor or pestle & mortar.
  • Add the rest of the ingreidents to the processor & wiz until you have your paste.
