Super Easy Lentil and Spinach Stew

Being fortunate to have travelled a bit, I picked up this recipe while travelling in Africa. This simple dish is just perfect for a mid week “what to do” dish and takes no time at all. It ticks all the right boxes in that it’s delicious, homely and is perfect comfort food for a cold winters night to sit in front of the television watching your favourite movie.

If you are looking to have something to accompaniment the dish, I would suggest roti bread, but you can use naan or even a burrito wrap.

Ingredients

  • 1 Tbsp 1  olive oil

  • 1 1 onion

  • 3 3 cloves garlic

  • 2 2 Roma tomatoes diced

  • 2 Tbsp 2 tomato paste

  • 1/4 cup 1/4 mixed coriander & parsley chopped

  • 1/2 teaspoon 1/2 teaspoon salt

  • 1 tsp 1 allspice

  • 1/2 teaspoon 1/2 dried coriander ground

  • 1 teaspoon 1 turmeric

  • 1 tsp 1 paprika

  • 3 cups 3 vegetable stock (or water if you don’t have any)

  • 1 cup 1 red lentils

  • 5 cups 5 fresh spinach leaves 

  • Another 1/4 cup mixed coriander & parsley chopped

Directions

  • In a medium-sized pot, saute the onion and garlic with the olive oil until soft and nearly golden.
  • Then add the tomatoes and tomato paste and keep stirring until the tomatoes all the water is released. It’s a good idea to keep cooking until most of the tomatoes water is evaporated.
  • Put your herbs and spices and saute for another couple of minutes until it looks like a thick paste.
  • Add the stock and bring it to a boil, then add in your lentils and cover the pot.
  • Cook the lentils for 15 minutes until they start to soften up and then add the spinach.
  • Keep the pot covered and allow it to cook for 10 minutes more until the spinach has wilted and the lentils have cooked completely.
  • Add your other herbs and stir through. Taste and add to salt.
  • Serve and enjoy.
