Teriyaki Mushroom Nugget Stir Fry with Garlic & Ginger

Every now and again we all have those nights that we come home and either don’t want to cook anything that’s too involved or nothing at all. Especially if it’s a jam packed busy week with meetings at work that run late, kids tuition, ballet or just plain old stuck in traffic. Dont worry as I have a quick and delicious way out for you.

As my beautiful wife is a vegetarian, one of the things I love about this is that it makes me think outside the box and look at how I can cook something that I would normally love, but put a twist on it so that it can be eaten by everyone in the house together.

The secret to this dish is the mushroom nuggets. They aren’t crumbed or pre-fried and just perfectly soak up your sauce. The mushroom nuggets are very versatile & can be used in any cuisine really. You should be able to get these at any reputable vegetarian/vegan grocer. Im in Brisbane, Australia so we go to The Green Edge.

There may be a few little cheats in here, but as I said, the dish takes no time at all and is something different and is absolutely delicious. Enjoy!

Teriyaki Mushroom Nugget Stir Fry with Garlic & Ginger

Ingredients

  • 450 packet 450 packet of brown rice

  • 600 packet 600 packet of vegetarian mushroom nuggets

  • 100 g 100 shiitake mushrooms

  • 400 packet 400 packet stir fry vegetables

  • 1 Tbsp 1 olive oil

  • 1 Tbsp 1 sesame oil

  • 3 cloves garlic minced

  • 1 thumb sized piece of ginger minced or jared

  • 1/4 cup 1/4 of teriyaki sauce

  • 1 Tbsp 1 of sesame seeds

Directions

  • Heat your pan on a high heat, add the olive oil with your garlic & ginger & stir though for 30 seconds.
  • Add the mushroom nuggets & cook for 2 minutes.
  • Add your vegetables, shiitake mushrooms & sesame oil, stir though & cook for 2 minutes.
  • Add the teriyaki sauce & cook for a further 2 minutes.
  • Meanwhile put your rice in the microwave & cook as per packet instructions.
  • Take your pan of the heat & stir through the sesame seeds.
  • To serve it up, put some rice in a bowl & then your stir fry on top of the rice.
  • Sprinkle a little more sesame seeds over the top. Enjoy!
