Honey Garlic Glazed Carrots in Brown Butter

These honey garlic glazed carrots in brown butter, make the perfect side dish to any Sunday roast.

Anyone who knows me, knows I like a good roast. I don’t know what it is, but there is just something amazing about the taste and also the variety of options that you can add to any roast lunch or dinner.

Growing up, Sundays were our family roast day. I remember when I was a kid my mother used to slave tirelessly in the kitchen on a Sunday and she would come out with the most spectacular roast meats. Whether it was chicken one week, pork the next with the best roasted vegetables you ever saw and of course gravy, don’t get me started on gravy. I’m already getting hungry just thinking about it. I will save that for another day.

Having said that, get set for one of the most easy and delicious sides you can have with your roast. You don’t have the honey garlic glazed carrots have this with just a roast. This will also make a good side dish to any home cooked meal and not just roasts. My only tip for this dish is that you use real butter if your dietary choice permits.

Ingredients

  • 4 Tbsp 4 butter

  • 2 Tbsp 2 honey

  • 1 tsp 1 fresh thyme chopped

  • 1 garlic clove grated

  • 1 Tbsp 1 fresh parsley chopped

  • 500 g 500 carrots cut into even size pieces

  • Salt & Pepper to taste

Directions

  • Put your pan on a medium heat & cut the butter into pieces then add them to the pan. Keep an eye on it as the butter can go from brown to burnt very quickly. You know when it’s done, when the butter smells a little nutty & it’s a little golden in colour.
  • When it’s brown, take the butter off the heat  & add the honey, garlic, thyme and mix them together.
  • Add your carrots and stir through to coat them then transfer them onto your roasting dish. 
  • Season with salt & pepper & put them in the oven for 20 mins or until the tender.
  • Put the carrots on your serving dish & garnish with parsley and serve warm. Enjoy!
