Vegetable Rogan Josh with Paneer

This dish uses two out of three parts of my mantra, simple and easy. The great thing about creating your own spectacular Indian dishes is that there is no stopping what you can do with any variations. You might be using rogan josh paste, and you may think the taste would be the same but with the likes of capsicum and vegetable stock added in the mix makes it a complete game changer and tastes sensational. This is ideal with rice & naan bread.

Ingredients

  • 1 large 1 brown onion (1/2 diced 1/2 sliced)

  • 2 cloves of garlic

  • 1 yellow capsicum

  • 500 g 500 tomatoes sliced into wedges

  • 1 small 1 eggplant

  • 2 cups 2 loosley packed spinach

  • 200 g 200 paneer crumpled

  • 2 Tbsp 2 rogan josh paste

  • 1 cup 1 vegetable stock

  • 2 Tbsp 2 olive oil

Directions

  • Heat your pan on a medium heat & add the garlic & onions until tender & clear.
  • Add the paneer and cook for about 1 minute then add your capsicum, tomatoes & eggplant & stir through for 2-3 minutes so that the tomato juice is released.
  • Add the vegetable stock & simmer for 20-30 minutes until your sauce is slightly reduced.
  • dd your spinach & stir through until it’s wilted, take off the heat and serve. Enjoy!
