Watermelon, Radish & Feta Salad with Balsamic Glaze

This watermelon, radish & feta salad with balsamic glaze is just divine. With juicy watermelon, crispy radish that just pops when combined with the mint and balsamic glaze. It’s the perfect salad on those hot Summer days!

Who doesn’t love sweet juicy watermelon in Summer? It’s great for snacking pretty much all day long. Watermelon is so versatile and can be used in so many recipes, like smoothies, salads and even pizzas. Yes, I have actually had watermelon on a pizza and it was delicious. I will have to share that one with you one day.

I use baby spinach as the base for my watermelon, radish & feta salad, as it’s a great way to bulk the salad up. Then obviously layer your mint, sliced radishes, feta and watermelon. With the balsamic glaze, I generally used store bought, but if you have the time then yes, definitely make your own. Add your salt and pepper to taste and your salad is ready to serve.

Ingredients

  • 400 g 400 watermelon cut into editable chunks

  • 200 g 200 baby spinach

  • 200 g 200 radishes

  • 4 4 sprigs of fresh mint

  • 50 g 50 feta cheese cut in 2cm cubes or crumbled

  • Olive oil for drizzling.

  • Balsamic glaze for drizzling

Directions

  • Loosely place the baby spinach on the bottom of the salad bowl.
  • Then place your mint leaves & radish.
  • Add the feta then place your watermelon.
  • Drizzle a little olive oil and the balsamic glaze over the top.
  • Salt & pepper to taste, then Serve. Enjoy!
