Basil Pesto

Pesto is an essential staple in almost every kitchen. There are so many ways and varieties you can make too. It’s tastes great, easy to make and is so versatile to use. As I just said before, it’s very simple to make so don’t stress. Just let the ingredients do all the work for you. If I can suggest just one thing when you make this is please use a good quality extra virgin olive oil.

I just love the smells it gives off while your making it. I love to spread it on some crusty bread with a pinch of pecorino on top. Yum!

Ingredients

  • 2-3 2-3 cloves garlic (pending on your tastes)

  • 1/4 cup 1/4 pine nuts

  • 4 cups 4 fresh basil leaves lightly packed

  • 3/4 cup 3/4 pecorino or parmesan cheese

  • 1/3-1/2 cup 1/3-1/2 olive oil

  • 1 Tbsp 1 lemon juice

  • Salt and pepper to taste

Directions

  • Add the basil into your food processor, then the cheese, pine nuts, garlic on top.
  • While you are mixing the ingredients slowly add the olive oil until you are happy with the texture. 
  • Don’t forget to taste & add salt & pepper if you need.
  • Either serve it up, cook with it or store it away in the fridge for future use. Enjoy!
