Italian Style Sausage Casserole

I seem to be a bit of a casserole freak lately and today doesn’t seem like it’s going to change. I have another delicious winter warmer for you all to try which I think will become a permanent dish on your home menu.

I’m a bit conflicted about whether or not to call this dish a casserole or a bake, as it really does sit in the middle of the two. However, the one thing I am not conflicted about is how good it tastes. Combining the taste of Italy with your favourite veges and of course cheeeeese.

You will love this and it will give you some great leftovers too. CAUTION: Must have with wine.

Ingredients

  • 500 g 500 Bow Tie pasta

  • 500 g 500 Frozen Vegetables (Carrots, Zucchini, Beans etc)

  • 6 beef sausages sliced

  • 4 cloves garlic

  • 1 small 1 brown onion minced

  • 1 cup 1 of vegetable stock

  • 1 can 1 of condensed tomato soup

  • 1 can 1 of diced tomatoes

  • 1/2 cup 1/2 of red wine

  • 3 cups 3 of strong cheddar cheese

  • 1 tsp 1 garlic powder

  • 1 tsp 1 of dried parsley

  • 1 tsp 1 dried oregano

  • Salt & pepper to taste

Directions

  • Boil your pasta al dente.
  • Set your oven to 180°C.
  • On a medium heat cook you sliced sausages & then set aside.
  • Drain & wash your pasta & put it in a large mixing bowl.
  • Add all the other ingredients leaving out 1 cup of cheese into the bowl & combine well.
  • Pour into a casserole dish & sprinkle the last cup of cheese on the top.
  • Bake for 45 minutes & then rest for 5 minutes.
  • Plate up & Enjoy!
