Mixed Tomato Salad with Lentils

Spring is here, which means sunshine, outdoor picnics and BBQ’s with meats galore and salads to boot. This mixed tomato salad with lentils recipe is everything you want in a salad – fresh mint and tomatoes with the crunch of red onion, balsamic vinegar and let’s not forget the goat’s cheese to pull it all together.

The great thing about this recipe is that it is so simple, yet so delicious, and it is so easy to make. You can be versatile with the type of tomatoes you use depending on what your taste is. You can use grape or cherry tomatoes, or even large roma tomatoes. instead of slicing the smaller sized snacking tomatoes. 

This mixed tomato salad with lentils is great paired with your favourite bun or bread roll. It also makes a great snack. I know you’ll enjoy this delicious salad. It doesn’t hurt to have a glass white with this either. Enjoy!

Ingredients

  • 400 can 400 can lentils, rinsed, drained

  • 350 g 350 mixed tomatoes, sliced

  • 100 g 100 goat’s cheese, crumbled 

  • 2 2 large vine-ripened tomatoes, sliced

  • 2 2 kumato tomatoes, sliced

  • 1 1 small red onion, halved, thinly sliced

  • 1/2 cup 1/2 flat-leaf parsley leaves

  • 1/2 cup 1/2 mint leaves

  • 2 Tbsp 2 olive oil

  • 2 tsp 2 balsamic vinegar

  • Salt & pepper to taste

Directions

  • Place all the tomatoes & the onion on a serving platter. Sprinkle over the lentils, parsley and mint.
  • Put the oil & vinegar in a small bowl. Mix them together. 
  • Drizzle over the salad. 
  • Sprinkle with the goat’s cheese.
  • Salt & pepper to serve. Enjoy!
