3 Cheese & Roasted Grape Pizza

This 3 cheese & roasted grape pizza is totally decadent and takes your pizza to a whole new level! It’s super cheesy, gooey goodness & with the roasted grapes & rosemary, it’s just divine.

Who loves their pizza? Pizza is almost a religion in our house. And this 3 cheese & roasted grape pizza is no exception. Just picture it now, Saturday nights with a wine in hand, sitting on the patio smelling the pizzas cooking in the pizza oven. Life does not get much better than that. I don’t know what it is but the combination of the grapes, rosemary and the 3 cheeses just works a treat.

With the grapes, just make sure that you use the red grapes, as I find their flavour is much sweeter and tastes better with the rosemary. I have tried using green grapes and found them to have a little bit of a bitter taste out of the oven. Another good tip is to make sure you brush a little olive oil on your pizza base before you add the topping. Use your favourite brands of the ricotta, parmesan and mozzarella. But as always, fresh is always best.

This great pizza recipe that works perfectly for pizza night at home or even for entertaining. Just be sure to make extra! It will not last long at all! This pizza is a family favourite of ours and I hope you love it as much as we do. Enjoy!

Ingredients

  • 1 1 Pizza Base

  • 1/2 cup 1/2 ricotta cheese

  • 1/2 cup 1/2 parmesan cheese shaved or grated

  • 1/2 cup 1/2 mozzarella cheese grated

  • 2 cups 2 red seedless grapes

  • 2 Tbsp 2 olive oil

  • 1 sprig 1 rosemary

  • salt & pepper to taste

Directions

  • In a mixing bowl toss your grapes, 1 Tbsp olive & rosemary leaves.
  • Put them on a baking tray & pop in the oven at 230°C for 10-15 minutes.
  • Rub 1 tablespoon of olive oil over your pizza base with a pinch of salt as well.
  • Spread the ricotta over the base then sprinkle your parmesan & mozzarella.
  • Add the roasted grapes on top of your cheeses & spread evenly.
  • Put your pizza in the oven at 230°C for approx 10-15 minutes or until your cheeses are lightly brown & bubbling.
  • Remove from the oven, slice up, serve & enjoy. YUUUM!
