BBQ Veggie Skewers

These BBQ veggie skewers are just perfect as an easy side dish or entrée to enjoy out on the deck on a beautiful summer evenings or to bring along to BBQ’s.

It’s that time of year of nights eating outside with friends and family with great food and company. There is nothing better than sitting outside with a nice cold drink at night chatting away with great tunes in the background, a full belly and just enjoying the summer weather. It’s time to get the dust off the BBQ!

These BBQ veggie skewers are easy to make with just 7 ingredients (not including the sauce) and just 30 minutes to prepare. For the vegetables, I generally go with a mix of savory and sweet flavours such as capsicum, onion, artichokes, cherry tomatoes, portobello mushrooms and you can’t forget haloumi. All they need is a little salt and pepper and your BBQ or grill does the rest. If you want some protein, you could add some seasoned tofu or marinated tempeh.

For the marinade, I like to keep it simple with olive oil, garlic, minced rosemary & onion powder which pairs perfectly with these skewers. Remember that there are times where keeping it simple can bring out the best flavours.

Whether on the BBQ, grilled or roasted, these veggie skewers are easy to whip up and they’re absolutely delicious. Feel free to serve them as a light lunch or as a side dish to any meal.  Depending on what else you’re cooking you could also serve these over a bed of cooked rice or quinoa or with a side salad. Although no one one will be paying attention to the main dish with these BBQ veggie skewers are on the table. Enjoy

Ingredients

  • 2 cups 2 cremini mushrooms cut in halves or quarters pending size

  • 1 1 punnet of cherry tomatoes

  • 1 1 green capsicum cut into chunks

  • 1 cup 1 mixed olives 

  • 1 1 red onion, cut into chunks

  • A small jar of marinated articokes

  • 200 g 200 halloumi cut into cubes

  • For the Marinade
  • 1/4 cup 1/4 olive oil

  • 3 3 cloves of garlic, minced

  • 1 tsp 1 fresh rosemary minced

  • 1 tsp 1 onion powder

  • salt & pepper to taste

Directions

  • Turn your BBQ on to a medium to high heat.
  • In a small bowl, whisk together olive oil, garlic, rosemary, salt and pepper.
  • Assemble your skewers in the order you like.
  • Place on the BBQ & brush the marinade over the skewers.
  • Cook them for 10-15 minutes.
  • Turn them occasionally & brush some more marinade on them when you turn them.
  • Serve & Enjoy!
