Spicy Thai’waiian Pizza

This spicy thai’waiian pizza is bursting with an amazing peanut sauce, deliciously fresh and crisp vegetables and beautiful curried tofu

I have a confession to make. I am one of “those” people that don’t like pineapple on a pizza. I can just see you all shaking your head or facepalming right now. I will eat it if I have to but generally “NUP”. I also don’t like mint & chocolate combinations, but let’s leave that debate for another day.

This spicy thai’waiian pizza however, I love the pineapple on this & to be fair it’s a necessity on this pizza as the pineapple breaks through the spicy peanut savoury flavour with a nice burst of sweet. 

It’s a little different for a pizza but totally worth it. I’m a big fan of Thai food so when I wanted to try this pizza I pretty much knew that this was going to be a hit. Fusion foods this, take amazing flavours from two different cuisines and throw them together into one amazing meal. Trust me, this pizza will become a permanent fixture on your home pizza menu. Cheers!

Spicy Peanut Sauce Ingredients

  • 3 Tbsp 3 peanut butter

  • 1 Tbsp 1 sambal oelek

  • 1 Tbsp 1 rice wine vinegar

  • 1.5 Tbsp 1.5 olive oil

  • 1.5 Tbsp 1.5 soy sauce

  • PIZZA TOPPINGS
  • 1 tsp 1 olive oil

  • 1/2 1/2 lime juiced

  • 250 g 250 firm tofu cut into 2cm cubes

  • 1/2 tsp 1/2 curry powder

  • 1 1 medium carrot grated

  • 2 2 spring onions finely sliced

  • 1 1 medium tomato chopped

  • 2/3 cup 2/3 pineapple chopped

  • 1/4 cup 1/4 bean sprouts

  • 1 Tbsp 1 fresh mint chopped

  • 1 Tbsp 1 fresh coriander chopped

Directions

  • Preheat your oven to 220°C
  • In a small bowl, add your peanut butter, vinegar,soy sauce & sambal oelek.
  • Whisk them together while slowly adding in your olive oil until you get a nice sauce consistency.
  • Sprinkle your tofu with the curry powder then add them to a small skillet on a medium to high heat & cook for approx 10 minutes or until golden brown.
  • Spread your spicy peanut sauce on your pizza base.
  • Then spread evenly the carrot, spring onion, tomato, pineapple & tofu.
  • Put into the oven for approx 10 minutes or until the crust is golden brown.
  • Remove the pizza from the oven and garnish with the coriander, mint & beansprouts.
  • Splash the lime juice over the pizza, cut into slices & serve. Enjoy!
