Potato & Bocconcini Pizza

This potato & bocconcini pizza will be one of the most simple and delicious pizzas you will have tasted. It’s wholesome and has the perfect combination of flavours.

You’re going to need to trust me on this one. I know it’s a litte carb on carb action, but this combination really works and goes down a treat. This potato & bocconcini pizza has such a great flavour. The secret of this pizza is the quality of ingredients. 

Yukon potatoes are perfect for this pizza. A good brand of minced garlic is definitely a bonus for this recipe. Fresh thyme is a must on this pizza. When it goes in the oven the thyme flavour just flows through the entire pizza and makes it just a spectacular flavoured pizza. Enjoy!

  • 1 1 pizza base (store bought or homemade)

  • 3 Tbsp 3 minced garlic

  • 1 Tbsp 1 Olive Oil

  • 3 3 medium sized potatoes thinly sliced

  • 200 g 200 bocconcini cheese roughly torn

  • 1/4 1/4 red onion finely diced

  • 1 Tbsp 1 fresh thyme

  • 1/4 cup 1/4 grated parmesan

  • Salt & pepper to taste


  • Preheat your oven at 200°C.
  • Brush the olive oil of the pizza base.
  • Spread the garlic over the base evenly.
  • Add the potatoes evenly on the pizza.
  • Then add the bocconcini cheese.
  • Add the red onion & thyme over the pizza evenly.
  • Sprinkle over the parmesan.
  • Salt & pepper to taste.
  • Put the pizza in the oven for 15 minutes or until you have a golden brown top layer.
  • Remove from the oven, slice & serve.
